Fried Maitake Mushrooms

These delicious mushrooms have an earthy aroma and gamy flavor! This is great to serve with a dipping sauce, in a Po’ boy sandwich, topped on salads, or in a wrap.


Ingredients

olive oil (enough to submerge mushrooms for frying)

1 bunch maitake mushrooms (8 oz)

(optional): dried rosemary and green onion for garnish


Wet Batter

1 cup whole wheat flour

1 1/3 cup water

1 teaspoon onion powder

1 teaspoon garlic powder

1 teaspoon sea salt


Dry Batter

1 cup whole wheat flour

1 teaspoon onion powder

1 teaspoon garlic powder


Instructions

1.start by making the wet batter combining in a bowl 1 cup of whole wheat flour, 1 cup of water, 1 tsp onion powder, 1 tsp garlic powder, and 1 tsp of sea salt.

2.combine dry batter in a bowl with 1 cup of whole wheat flour, 1 tsp of onion powder and garlic powder.

3.rinse and cut mushrooms into small pieces.

4.add mushroom pieces to wet batter and coat both sides.

5.move pieces to dry batter then add to a baking tray.

6.continue this process until all pieces are coated.

7.add olive oil to cast iron and heat on medium/high (note olive oil burns faster than vegetable oils so keep an eye on the consistency of the oil.)

8.add coated mushroom pieces to cast iron and fry each side for about 2 minutes or until crispy.

9.continue this process and places pieces on rack when finished frying.

10.(optional) plate and top off with dried rosemary and green onion.
