Jan 101 min readHoliday Gingerbread CookiesUpdated: Jun 8Prep Time: 15 Minutes | Cook Time: 20 Minutes | Total Time: 35 Minutes Ingredients2 1/2 cups unbleached organic flour1 tbsp. baking soda1 tbsp. baking powder2 tsp. ginger powder1 tsp. pumpkin pie spice1/2 tsp. sea salt3/4 cup maple syrup1/4 cup date syrup1/2 cup vegan butter1/4 cup oat milkwalnuts (optional) garnishIcing Recipe2 tbsp vegan butter1/2 cup powdered sugar1-2 tbsp oat milk Instructions1.Preheat oven to 375 F.2.Mix flour, baking soda, baking powder, ginger, pumpkin pie spice and salt together in a bowl.3.Stir in the rest of the ingredients.Using a whisk to form a sticky dough.4.Lay parchment paper on baking tray.5.Using a melon baller scoop, place scoops of dough on sheet pans and separate by one inch.6.Place a pieces of walnuts on top of each scoop of dough and lightly press down.7.Bake for 10 minutes, let cool and drizzle on icing.Watch this video to see the recipe in action!
