Holiday Gingerbread Cookies

2 1/2 cups unbleached organic flour

1 tbsp. baking soda

1 tbsp. baking powder

2 tsp. ginger powder

1 tsp. pumpkin pie spice

1/2 tsp. sea salt

3/4 cup maple syrup

1/4 cup date syrup

1/2 cup vegan butter

1/4 cup oat milk

walnuts (optional) garnish

Icing Recipe

2 tbsp vegan butter

1/2 cup powdered sugar

1-2 tbsp oat milk


1.Preheat oven to 375 F.

2.Mix flour, baking soda, baking powder, ginger, pumpkin pie spice and salt together in a bowl.

3.Stir in the rest of the ingredients.Using a whisk to form a sticky dough.

4.Lay parchment paper on baking tray.

5.Using a melon baller scoop, place scoops of dough on sheet pans and separate by one inch.

6.Place a pieces of walnuts on top of each scoop of dough and lightly press down.

7.Bake for 10 minutes, let cool and drizzle on icing.
