No-Waste Blueberry Oat Cookies

I love to make my own oat milk at home.. however, the left over oats can only be eaten mixed in a bowl with fruit and toppings so many times before its time to switch it up! I’ve been having fun experimenting with different cookie recipes with the oats leftover so I wanted to share a recipe that has been successful in my household.


Ingredients

2 cups of oat pulp

1 1/2 cup organic coconut flour

2 tbsp baking powder

2 tbsp cinnamon

1/2 cup organic blueberries

1/2 cup organic brown sugar


Step by Step

1.In a bowl mix these ingredients together.

2.Shape into small cookie balls onto parchment paper and cookie tray.

3.Heat oven too 350 F and place tray into oven for 20 minutes.

4.After 20 minutes, check cookies to preference. Let cookies cool for 5 minutes and enjoy!
